Low Carb!

This is an Asian-inspired stir-fry dish that you can bang on the table within thirty minutes or less.

Ingredients (serves 4 people)

  • 1 Red sweet pepper
  • 1 Green sweet pepper
  • 1 Onion
  • 2 Garlic cloves
  • 1 Pak Soi (it’s a vegetable)
  • 2 Chicken fillets
  • 1 Packet of Noodles
  • Sunflower oil
  • Curry powder
  • Ketjap Asin (salt)
  • Garlic powder
  • Sambal Manis
  • Salt
  • (Red pepper)

How do you make this fantastic Pak Soi Asin?

Chop the peppers roughly, the chicken breast into cubes and the garlic and onion very finely. Marinate the chicken cubes in a few tablespoons of Ketjap Asin with the finely chopped garlic and onion, garlic powder and curry. If you want it a bit hotter, chop half a red chilli pepper very finely and add that to the marinade too.

Cut off the bottom of the Pak Soi so you leave long stems, not too much but half an inch is enough (as shown here). Put on a pan of water for the noodles. Heat some sunflower oil in a frying pan and fry the Pak Soi in it crispy on both sides, about 3 minutes per side. Take the Pak Soi stems with tongs and put these away for a while.

Meanwhile, in the frying pan fry the chicken and in a wok pan stir-fry the
pieces of pepper for a few minutes. Stir-fry this for a while and put the noodles in the boiling water. While the noodles are cooking, add the peppers to the chicken and place the Pak Soi stems in a star shape on top as shown above. Leave it on gently for a while with a lid on so that the Pak Soi gets hot again.
