Low Carb!

Italian Surprise, a casserole with chicken and vegetables and cheeses. Low-carb and healthy but also a tad naughty with so many ingredients.

Ingredients

  • 1 Large Courgette
  • 1 Pointed Sweet paprika
  • 1 Yellow paprika
  • 1 Green paprika
  • 10 Cherry Tomatoes
  • 10 Black olives
  • 1 Small jar of Green Pesto
  • 1 Onion
  • 3 Cloves of Garlic
  • 6 Dried tomatoes in oil
  • 10 Chick Peas
  • 2 Balls Buffalo Mozarella
  • 6 Spoons Parmezan cheese, ground
  • 1 Bag ground Gouda cheese
  • 3 Chicken breasts
  • 1 Spoon dried Oregano
  • 1 Spoon dried Basil
  • 10 Leafs fresh Basil
  • 4 Spoons Olive Oil

Preparations

Cut the Courgette into thick slices and cover the entire bottom of the oven dish. Cut the chicken breasts into thin flat slices and rub in the dried Basil and Oregano on both sides. Heat some olive oil in a frying pan and grill the slices until nice and brown on both sides. Set the chicken aside. Cut the three colours of paprikas and put them in a bowl. Cut the dried tomatoes into thin strips, finely chop the garlic and onion and mix together. Also cut the black olives and cherry tomatoes in half.

Fry the seasoned chicken slices hard so they’re crispy and cook on a low hob for five minutes. Remove the chicken slices from the frying pan and turn the hob to the highest setting. Add the mixture of dried tomatoes, onion and garlic to the pan and fry for just a few minutes. Add the chicken back in and the green Pesto and stir well. Turn off the hob and put the mixture in the baking dish over the Courgette slices.
